Focused on the wilder and spontaneous side of fermentation brews are created in small batches. Two to three barrels at a time. The barrel is considered to be an additional ingredient. Beers develop the character desired in as little as three months, or as much as a few years. It’s a different model than most breweries. Covert Artisan Ales is a veteran owned and operated company.
